Popover Perfection

Popovers are a great go-to weekend breakfast.  They are simple and take no time at all to whip up since they require very few ingredients.  If you are ever in the Bar Harbor area in Maine make sure you stop at The Jordan Pond House.  They make the best popovers!  We went just a couple weeks ago and sat outside looking out onto the ocean with our seafood chowder (also great!) and some yummy popovers with jam.

The key to making great popovers is to make sure your batter is not cool when they go into the oven.  You do this by bringing your eggs to room temp-I put them in a bowl of warm water for a while to speed it up- and microwaving the milk for about 40 seconds before mixing it into the dry ingredients.  Another tip is to leave the oven door closed the whole cooking time and not cracking it open to peek before they are done.

Here's the recipe I use:
1 Cup Flour
1/2 tsp. Cinnamon 
1/2 tsp. Salt
1 Cup Milk (warm)
2 Large Eggs (room temp/warm)

Mix all dry ingredients together in medium bowl.  Add milk and eggs, mix until combined.
Poor into greased popover cups (3/4 full) .
Bake at 425* until golden brown -about 20-25 minutes.
I like to serve them with raspberry jam and tea.  My husband likes his with butter and cinnamon/sugar which is also good!
